Tanzanian cuisine is a reflection of the country's diverse history and culture. Influenced by Arab, Indian, and European cuisine, as well as local indigenous ingredients and cooking techniques, Tanzanian food is a unique fusion of flavors and traditions. At the heart of Tanzanian cuisine is the staple food of ugali, a thick cornmeal porridge that is eaten with a variety of stews and sauces. Ugali is typically made by mixing cornmeal with water and cooking it until it becomes thick and smooth. It is a simple, filling, and nutritious food that is enjoyed by people of all ages across the country.
In addition to ugali, Tanzanian cuisine is known for its grilled meats, or nyama choma, which are often seasoned with spices and served with a side of kachumbari, a salad made with tomatoes, onions, and chili peppers. Other popular stews and sauces include mchuzi wa samaki, a fish curry made with coconut milk and spices, and maharage ya nazi, a bean stew made with coconut milk and spices.
One of the highlights of Tanzanian cuisine is its seafood dishes, thanks to the country's proximity to the Indian Ocean. From grilled fish to seafood curries, Tanzanian seafood dishes are not to be missed. Some popular seafood dishes include calamari curry, prawn pilau, and grilled red snapper.
Vegetarians and vegans will also find plenty of options in Tanzania. The country is home to a variety of vegetables, fruits, and legumes that are used to create delicious and flavorful vegetarian and vegan dishes. Some popular vegetable dishes include mchicha wa nazi, a spinach and coconut milk stew, and bamia, a dish made with okra, tomatoes, and onions.
Tanzanian cuisine also boasts a variety of meat dishes, including beef, chicken, and goat. Some popular meat dishes include nyama choma, or grilled meat, and biryani, a spiced rice dish typically made with meat, vegetables, and sometimes eggs. To satisfy your sweet tooth, try some of Tanzania's delicious desserts, such as kashata, a sweet and crunchy coconut treat, or vitumbua, small sweet pancakes made with rice flour and coconut milk.

There are not enough words in any language to describe our experience with Simba Safaris, specifically with our safari driver/guide, Geoffroy Bosco!.
We had the most amazing experience … our driver Urassa was outstanding he was so attentive and his love of the animals was so evident … the lodges along our route were exceptional.
We spent 4 days with our guide Estommy on safari. He made these 4 days unforgettable for us. With his knowledge he could answer us every question on the animals and gave us a very good insight in african culture, as we could ask him everything.
